Our Organisation

Based in the heart of Bury, we are the East Lancashire Railway, a lovingly restored heritage railway which journeys for twelve miles through picturesque scenery from Heywood in the East to Rawtenstall in the North.

To support the Railway, we own and run two pubs. The Trackside is located at Bury Bolton Street Station and serves up to 500 covers per week to both locals and visitors to the area. You’ll join our team at an exciting time for growth following significant investment into our pub, driving the development of our food offering, and helping keep this vital spark of British Heritage alight.

We have exciting developments planned as we broaden our horizons and plan to grow rapidly over the coming months. The Role - Head Chef or Sous Chef

Reporting to the Pubs Manager, as Head Chef you will oversee the day-to-day running of our kitchen, supporting a team of between 3 to 5 Chefs. Your duties will include:

  • Assisting with menu and dish creations
  • Ensuring the production of meals and the presentation are of the highest standard
  • Liaising with suppliers
  • Maintaining high standards of cleanliness at all times and ensuring all paperwork is completed on time
  • Undertaking kitchen opening and closing tasks
  • Stock control and achieving the target gross profit for food
  • Leading and coaching your team
  • Delivering excellent customer service

If you join as a Sous Chef, you will work alongside the Head Chef and help deliver and develop the food offering at The Trackside and lead the kitchen team in the Head Chef’s absence.  

Our Requirements – Head Chef or Sous Chef

  • Experience gained as a Chef, with experience managing a team of Chefs if joining as Head Chef
  • Level 2 food hygiene certificate (Level 3 is desirable although not essential)
  • Ability to work alone, prioritise workload, and work well under pressure
  • Ability to work effectively with the front of house team

The Package

You will be working between 40 and 45 hours, 5 days out of 7 per week between the hours of 8am and 8.30pm. You’ll benefit from:

  • A pay rate of up to £13.50 per hour, with the level depending on experience (salary equivalent to £28,080 based on 40 hours per week and £31,590 based on 45 hours per week)
